Breakfasting on the go is something that I have to do if I want to make time to fit in a gym session before work in the morning.
Don’t get me wrong, there are many bars on the market that I could have instead of making my own, but:
A. What do they actually have in them?
B. I want to be creative.
So, along came these breakfast oat cups. You can make them and have them out of the oven ready for the next days breakfast in less than 20 minutes, what more could you want?
So, here is the recipe:
You will need:
– 142g of mashed banana.
– 2 tablespoons of banana flour (could sub for any flour of choice),
– 12g of Natvia natural sweetener,
– 25g of That Protein Happy Hemp and Baobab protein powder,
– 50g of jumbo oats (could sub for muesli)
Optional add ins:
– Dried fruits,
– Cacao nibs,
– Peanut/almond butter,
– Chocolate chips.
Simply mix together all of your ingredients.
Line a muffin tin with silicone cupcake cases.
Drop 1 tablespoon of mixture into the case and then spread up the sides, leaving a bowl like shape.
Pop in to an oven pre-heated at 160C for 10 minutes.
Take out, and fill with whatever you fancy!
